Cakes
You can bake a cake in a bread machine by adding wet ingredients first, dry ingredients on top and running the dedicated cake cycle.
The Cycle: Most modern machines feature a "cake" or "quick" setting that skips the long yeast-rising phases, moving straight into gentle mixing and baking.
Order of Ingredients: Liquid ingredients (like milk, melted butter and eggs) go into the pan first, followed by dry ingredients (flour, sugar and baking powder) on top.
The Paddle Issue: The machine's kneading paddle leaves a small hole at the bottom of the finished loaf. You can also mix batter by hand and use a bake-only setting to avoid over-mixing.
