Bread Machine Lemon Cake with Poppy Seeds
This easy bread machine recipe makes a delicious, all-purpose loaf you can slice and enjoy anytime. The best part is your bread machine does most of the work.

Wet Ingredients:
½ cup buttermilk, room temperature (125 mL)
3 Tbsp. lemon juice, freshly squeezed (45 mL)
2 tsp. lemon zest, freshly grated (10 mL)
¼ cup butter, cut into ½" cubes, room temperature (50 mL)
2 large eggs, room temperature
1 tsp. pure vanilla extract (5 mL)
Dry Ingredients:
¾ cup Monk Fruit Sweetener with Erythritol (Granular) (175 mL)
1¼ cups bread flour, spooned and leveled (300 mL)
1 tsp. poppy seeds (5 mL)
1¼ tsp. baking powder (6 mL)

⅔ cup buttermilk, room temperature (150 mL)
3 Tbsp. lemon juice, freshly squeezed (45 mL)
2 tsp. lemon zest, freshly grated (10 mL)
⅓ cup butter, cut into ½" cubes, room temperature (75 mL)
2 large eggs, room temperature
1 tsp. pure vanilla extract (5 mL)
Dry Ingredients:
1 cup Monk Fruit Sweetener with Erythritol (Granular) (250 mL)
1½ cups bread flour, spooned and leveled (375 mL)
1 tsp. poppy seeds (5 mL)
1¼ tsp. baking powder (6 mL)

Wet Ingredients:
¾ cup buttermilk, room temperature (175 mL)
¼ cup lemon juice, freshly squeezed (50 mL)
2 tsp. lemon zest, freshly grated (10 mL)
½ cup butter, cut into ½" cubes, room temperature (125 mL)
3 large eggs, room temperature
1 tsp. pure vanilla extract (5 mL)
Dry Ingredients:
1½ cups Monk Fruit Sweetener with Erythritol (Granular) (375 mL)
2¼ cups bread flour, spooned and leveled (550 mL)
1 tsp. poppy seeds (5 mL)
1½ tsp. baking powder (7 mL)
Put all the ingredients, in the order listed, into the bread pan fitted with the kneading paddle. Secure the bread pan into the bread maker.
MENU: Cake
CRUST: Light, Medium or Dark
LOAF: 1, 1.5 or 2 lbs depending on the recipe used above
Press START to mix and bake.
After the batter has mixed for 4 minutes, stir sides and bottom of bread pan with rubber scraper to ensure complete mixing. Allow to continue mixing.
When the cycle is complete, remove the bread pan from the machine and shake the bread onto a wire rack to cool for at least 10 minutes before slicing. Bread slices best when allowed to cool. If not serving after cooling, cover in plastic wrap to maintain freshness.
