Frito Pie (New Mexico)
Frito pie is legendary in the Southwest for being spicy, salty and cheesy fabulous. It is also great for being a last minute meal as the majority of items needed can be gotten from your pantry.
1 lb ground beef
1 medium onion, chopped
2 (15 oz) cans Ranch Style beans (pinto beans in seasoned tomato sauce)
1 (9¾ oz) pkg Fritos corn chips
2 (10 oz) cans enchilada sauce
2 cups cheddar cheese, shredded
Garnish:
green onions, thinly sliced
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Grease a 9x13” baking dish.
In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through.
Reserve 1 cup corn chips for topping. Place remaining corn chips in the prepared baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips.
Bake, uncovered, 15-20 minutes or until cheese is melted. Sprinkle with green onions and serve.
