Orange Butter with Almond

orangealmondbutterMelting a portion of the butter and whisking in more that was cold made the final result spreadable. Adding orange zest to the warm melted butter extracted all its flavour compounds. The water in the honey and butter dissolved the salt and ensured that the condiment was evenly seasoned.

8 Tbsp. unsalted butter, cut into ¼" pieces
2 tsp. orange zest, freshly grated
2 tsp. pure honey
¼ tsp. pure almond extract
⅛ tsp. sea salt

Do not use buckwheat honey; its intense flavour will overwhelm the other flavours.

Microwave 2 Tbsp. butter in medium bowl until melted, about 1 minute. Stir in orange zest, honey, almond extract, salt, and remaining 6 Tbsp. butter.

Let mixture stand for 2 minutes. Whisk until smooth. (Butter can be refrigerated for up to 3 days.)

Makes ½ cup.
