Truffle Butter (Black)
Make your own black truffle butter for a fraction of the cost of high-end stores. The earthy, nutty flavour of black truffles infuses into the butter and turns any dish into a luxurious culinary experience. It's particularly great over meat, fish, risotto, and potatoes. When finding ways to use truffle butter, consider the flavour of truffles (which can be very hard to put into words). This butter is no ordinary butter. Truffles have an earthy, oaky, musky, meaty, even gamy flavour which can somewhat resemble that of above-ground mushrooms. Truffles taste like they smell-pungent, slightly sweet, and very savoury. Often times the aroma of a truffle packs more of a punch than their flavour does. Together, the flavour and aroma of truffles add a delicious savoury/gamy note to a dish without overpowering the other flavours.
1 cup (2 sticks) unsalted butter, room temperature
2 Tbsp. black truffle, finely grated (2x4 oz)
1 tsp. kosher salt
½ tsp. black pepper, freshly cracked
In a small mixing bowl combine butter, truffle, salt and pepper. Adjust seasoning to taste with additional salt and pepper.
Spoon the butter onto a piece of parchment paper or plastic wrap, form into a log and wrap well.
Chill for at least 3 hours before using.
Makes 1 cup.
Cook's Notes: Use butter within 1 week or freeze and use upto 1 month.
