Cranberry Cake with Vanilla Butter Sauce
This cake is perfect for holidays; such as Thanksgiving and Christmas.
½ cup butter
2 cups sugar
4 cups flour
4 tsp. baking powder
1/8 tsp. sea salt
1 tsp. pure vanilla extract
2 cups milk
4 cups cranberries
1 recipe Vanilla Butter Sauce
Preheat oven to 325°F. Grease and flour a 9x13" baking pan.
In mixer, cream together butter and sugar, salt and vanilla. In small bowl, sift flour and baking powder. Add alternately to mixer with milk. Add cranberries and mix just until combined. Pour into prepared pan.
Bake for 45 minutes or until cake tester comes out clean. Serve with warm Vanilla Butter Sauce.
Makes 15 servings.
Cook's Note: You can substitute the cranberries for blueberries, blackberries or raspberries.
