Grapefruit with Rum and Brown Sugar (Grilled)

2 oz brown sugar (50 g)
2 Tbsp. rum, brandy or vermouth

Garnish:
sprigs of mint

Halve the grapefruit, loosen the segments from the skin and from the centre with a grapefruit knife or other sharp knife, so they are easy to remove. Sprinkle each half with sugar.

Pour over the rum, brandy or vermouth. Leave to stand for 10 minutes to allow the sugar and alcohol to soak right through the grapefruit.

Cook the grapefruit halves under a hot grill for about 5 minutes. Serve immediately decorated with a sprig of fresh mint.

Makes 4 servings.


Cook's Tip: Using a sharp pointed knife, cut around the middle of the grapefruit in towards the centre in a zig-zag pattern. Pull the halves apart gently. This sort of edge is called vandyke.
