Peach Cobbler (South Carolina)
With peach orchards abound, South Carolina is known for this dish.
4 cups fresh peaches, peeled and sliced
1 cup sugar, divided
½ tsp. pure almond extract
1/3 cup butter, melted
¾ cup all-purpose flour, unbleached
2 tsp. baking powder
pinch sea salt
¾ cup milk
Garnish:
vanilla ice cream
Preheat the oven to at 350°F.
In a large bowl, gently toss peaches, ½ cup sugar and pure almond extract; set aside.
Pour melted butter into a 2 qt baking dish.
In a small bowl, combine the flour, baking powder, sea salt and remaining sugar; stir in milk until smooth. Pour evenly over butter (do not stir). Top with peach mixture.
Bake for 50-55 minutes or until golden brown and bubbly.
Serve with ice cream if desired.
Makes 8 servings.
