Peach and Lime Cobbler

limespicepeachcobblerThis was my Granny's favourite recipe to make when she had bushels of peaches. Now I love to bake it whenever I can for my family and friends.

3 Tbsp. white sugar
3 Tbsp. brown sugar
2 Tbsp. crystallized ginger, minced
4 tsp. cornstarch
2 tsp. ground cinnamon
½ tsp. lime zest, freshly grated
8 medium peaches, peeled and sliced (about 5 cups)
1 Tbsp. lime juice, freshly squeezed

Topping:
3 Tbsp. butter, softened
¼ cup brown sugar, packed
2 Tbsp. sugar
1 cup cake flour
½ tsp. baking powder
¼ tsp. sea salt
2 Tbsp. water, cold
¼ cup pecans, chopped
1 large egg yolk
2 Tbsp. buttermilk

Preheat oven to 375°F (190°C/170°C fan, Gas Mark 5). Grease an 8" square baking dish or coat with cooking spray.

Mix the sugars, ginger, cornstarch, cinnamon and lime zest in a large bowl. Toss with peaches and lime juice. Transfer to prepared baking pan.

For the Topping:
Beat butter and sugars until blended. Whisk together flour, baking powder and salt; beat into butter mixture. Beat in water just until crumbly. Stir in pecans; crumble over filling.

Whisk together egg yolk and buttermilk; brush carefully over crumb mixture. Bake until topping is golden brown and filling is bubbly, 35-40 minutes. Serve warm.

Makes 8 servings.
