Pan-Seared Rib Eye Steak with Seasoning and Compound Butter

Garlic Herb Compound Butter:
½ cup butter, softened
2 cloves garlic, crushed
2 tsp. fresh thyme, chopped
2 tsp. fresh rosemary, chopped
¼ tsp. sea salt
1 tsp. lemon juice, freshly squeezed

Steak Seasoning:
1 tsp. sea salt
1 Tbsp. black pepper, freshly ground
1 Tbsp. orange zest, freshly grated
2 cloves garlic, minced
2 tsp. onion powder
1 tsp. dill seeds

Ribeye Steak:
2 (8-10 oz) ribeye steaks, boneless
2 Tbsp. butter, unsalted
1 head garlic, halved (top and bottom)

Make the Garlic Herb Compound Butter:
To a small bowl, add softened butter, garlic, thyme, rosemary, salt and lemon juice. Using a spoon, mix the ingredients together.

Place butter mixture on a sheet of plastic wrap and roll the butter into a log. Place in the refrigerator for 20 minutes, until butter hardens.

Season the Steaks:
Combine all the seasoning ingredients in a small bowl. Gently massage the seasoning on both sides of each steak and allow the meat to marinate for at least 20 minutes.

Preheat oven to 500°F (260°C/240°C fan, Gas Mark 10).

Cook the Steaks:
Place a large 10" cast iron skillet in the oven. Heat for 5 minutes.

Remove the cast iron skillet from the oven and place on a burner set to HIGH heat. Add butter and garlic halves flesh side down. Add steaks to the pan and sear for 45 seconds. Flip the steaks and sear on the other side for another 45 seconds.

Immediately place skillet in the oven and cook at 500°F for 2 minutes. Flip the steaks and cook for another 2 minutes on the other side. Remove skillet from the oven. The steaks should have an internal temperature of 120°F (this will be medium rare). If you like it more well done, cook it an additional minute for each temperature (1 minute for medium, 2 minutes for medium well, 3 minutes for well done).

Let steaks rest for 5-10 minutes before serving.

Top with compound butter and a lemon wedge. Serve and enjoy.
