Baked Salmon In Foil with Lemon and Herbs
My preferred method to bake salmon for company, as it can be prepared ahead of time and once it is in the oven, it is bother free. The salmon is always moist with a delicious lemony taste which is not too overpowering for the delicate salmon.
2 lemons, thinly sliced
1 (3 lb) salmon fillet
kosher salt
black pepper, freshly ground
6 Tbsp. butter, melted
2 Tbsp. pure honey
3 cloves garlic, minced
1 tsp. fresh thyme leaves, chopped
1 tsp. dried oregano
Garnish:
fresh parsley, chopped
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Line a large rimmed baking sheet with foil and grease with cooking spray.
To the center of the foil, lay lemon slices in an even layer.
Season one side of the salmon with salt and pepper and flip onto the lemon slices. Season the other side with salt and pepper.
In a small bowl, whisk together butter, honey, garlic, thyme, and oregano. Pour over salmon then fold up foil tightly around the salmon.
Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, loosen the foil to expose the salmon and broil for 2 minutes, or until the butter mixture has thickened and the salmon is slightly brown on top.
Garnish with parsley before serving.
