Grilled Salmon with Maple and Mustard Glaze (Cedar-Planked)
Planked salmon is a method of cooking and smoking salmon that has been used for many years. Make sure to use natural (no preservatives) red cedar. The salmon takes on a light, smoky woodiness from grilling on a cedar plank, for a lovely pairing of earth and ocean.
1½ lb salmon fillet
Maple and Mustard Glaze:
¼ cup maple syrup
2 Tbsp. grainy Dijon mustard
½ tsp. sea salt
¼ tsp. black pepper, freshly cracked
Soak one 12x7" (30x18 cm) untreated cedar plank in water for 30 minutes or for up to 24 hours; place salmon on top.
In small bowl, whisk together maple syrup, mustard, salt and pepper; brush half over salmon.
Place plank on grill over medium-high heat; close lid and cook, brushing once with remaining maple mixture, until fish flakes easily when tested, 20-25 minutes. Halve salmon lengthwise; cut crosswise into 6 slices.
Transfer to serving platter.
