Malanga Root Patties
Here is a wonderful recipe full of flavour and loved by all. This recipe is really easy to make and will do the body good. Malanga is full of great nutrition and will provide lots of great energy to get a person through the day. These little crisp patties are great for lunch and even dinner with a nice side salad.
4 cups malanga root, cubed
16 large green onions, chopped
12 cherry tomatoes, halved
1½ Tbsp. garlic powder
few dashes hot sauce or mild chili powder
sea salt
black pepper, freshly ground
Boil the Malanga until soft, drain, then mash and let cool. Then add cut up green onions and red cherry tomatoes, hot sauce, garlic powder, and salt and pepper.
Next make 5" patties with this mixture and set aside. Then spray each patty on the top and bottom with a little bit of olive oil and brown in heavy pan on both sides. These patties really become nice and crisp on the outside if browned in a convection oven.
Let cool and serve with a nice side salad.
Makes about 8 patties.
