Potato Patties (German Gedadschde)

german-gedadschdeGedadschde is a traditional German dish originating from the Palatinate region. These simple patties are made with a combination of mashed potatoes, flour, milk, salt, sugar and oil. Shredded cheese can be added to the mixture if desired. The mixture is shaped into patties, then fried in oil on both sides until golden brown. The patties are served as a side dish or a snack and it's recommended to pair them with a dollop of mayonnaise. Gedadschde is a fried mashed potato dumplings with flour. Sometimes, the flour is not mixed with mashed potatoes but instead used as a coating. I have even seen one which is the potato is not mashed but shredded mixed with flour.

3 cups potatoes, cooked and mashed
½ cup all-purpose flour, unbleached
milk, depends on the moisture of potatoes
¼ cup cheese, shredded (optional)
4 Tbsp. brown sugar
cooking oil

In a bowl, combine together mashed potatoes, flour, sugar and cheese.

Knead, add milk if the mixture is too dry.

In a pan, heat oil. Scoop mixture and carefully place in the pan. The size depends on your desired sizes.

Fry the mixture side after side until browned.

Roll over a paper towel to remove excess oil.

Let rest to cool down.

Serve with mayonaise.
