Mashed Potatoes (Buttermilk)
Buttermilk Mashed Potatoes is an easy, classic side dish. Buttermilk adds creaminess plus a hint of tangy flavour to the potatoes, while butter and simple seasonings give richness and extra flavour. Ideal for weeknight meals as well as special holiday dinners.
2 lbs potatoes, such as Yukon Gold or Russet, peeled and cut into 1-2″ chunks
8 Tbsp. unsalted butter, divided
½ cup whole buttermilk, at room temperature
½ tsp. kosher salt
black pepper, freshly ground
4 Tbsp. fresh chives, chopped, divided
Place prepared potatoes in a large pot and cover with cold water. Season thewater with salt.
Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are tender when pierced easily with a fork,about 15-20 minutes.
Drain the potatoes and return them to the pot.
Add 6 Tbsp. of the butter to the potatoes and mash with a potato masher until smooth and creamy. Then add buttermilk, salt, and pepper. Combine until mixture is fully incorporated. If needed, add a bit more buttermilk.
Taste the potatoes and adjust the salt and pepper as needed. Stir in 3 Tbsp. of the chopped fresh chives.
Serve the mashed potatoes hot, garnished with the remaining 2 Tbsp. butter and 1 Tbsp. of chives, if desired.
