Steamed Spinach

steamedspinachSpinach greens will become tender in a few minutes after steaming, so don't walk away from them.

1 lb fresh spinach, stems removed, rinsed well but not dried
2 tsp. extra-virgin olive oil
coarse sea salt
black pepper, freshly cracked

Place spinach in a large pot.  Cover tightly and cook over high heat until spinach begins to wilt, about 2 minutes.

Toss with oil, season with salt and pepper.

Makes 2 servings.
